White, Old World, Chardonnay from Burgundy

An unmistakable Puligny with florally lemony nose and taste. A luxurious aperitif but goes well grilled white fish and lobster!

Why we recommend this wine
We love Puligny Montrachet (see our trip notes here) and this is a classic made by a well respected winemaker; expensive but worth it! The 2017 vintage was the best in the last decade.

The wine
The grapes from 65 years old vines are harvested by hand and are wholly pressed in a pneumatic press at a low pressure to get a slow extraction. After a cold settling and a gentle racking of the must, the wine is put in French oak casks (15% of new oak). The primary and malolactic fermentations can then begin with wild yeasts. The wine is aged on fine lees for 14 months. A month before the bottling, the wine from the different barrels is put into a stainless steel tank to make the blend. The wine is finally fined and gently filtered before bottling it following the lunar calendar ("fruit” day to get a wine on freshness and minerality)

The wine estate
In 1980, at the age of 19, Vincent Girardin, the son of a family of winegrowers based in Santenay since the 17th century, decided to strike out on his own, and began producing wine from two hectares of vines that he had inherited from his parents.

To cope with the growing demand for his wines, he developed an approach that was new in Burgundy: he purchased grapes from producers who shared the same philosophy and the same high standards. In the early 2000s Eric Germain was appointed winemaker and a profound change began to take place; They decided to concentrate on the essence of the wines: the expression of the great terroirs of Burgundy. A new purity of style was born, which has now been acknowledged by all winemakers.

In 2012 Girardin sold his operation to a long-standing partner who, naturally, decided to continue with the small team of 9 people, who had been faithful to the Maison for many years. Eric Germain continues to uphold the style of the wines.
