Pedro Ximénez grapes are used to produce a varietal wine, an intensely sweet, dark, dessert sherry.  It is made by drying the grapes under the hot sun, concentrating the sweetness (similar to straw wine production), and then they are used to create a thick, black liquid with a strong taste of raisins and molasses that is fortified and aged in solera.  As PX is fortified they are pretty stable and stay in good condition for a while once the bottle is opened.

Sanchez Romate describe their PX as "Creamy and velvety, this a noble wine with dark, dense mahogany colours. Its smooth, delicate aromas are reminiscent of raisins and on the mouth it is sweet and persistent."

Sanchez Romate was founded at the end of the 18th century by Juan Sánchez de la Torre. It is one of the few remaining wineries in the Jerez that is still in the hands of local owners. The quality of their wines has enabled them to secure some remarkable customers. In 1909 they were appointed as Official Purveyor to the House of Lords in the UK and shortly afterwards, in 1917, they were appointed as Official Purveyors to the Sacred Apostolic Palace of the Vatican.
