The wine
Bourgogne Pinot Noir is the regional appellation whose wines can come from any part of Burgundy. The wine is fermented in traditional in open vats and then aged for 10 to 12 months in stainless steel vats before bottling

The wine estate
The family-run company of Maison Louis Latour is one of the most highly-respected in Burgundy.  In 1997 they were admitted into the exclusive club of the Hénokiens, which only admits companies that are leaders in their respective fields, remain family owned, have a history of 200 years' experience and still bare the name of the founder.  There are only approximately 30 of these companies in the world.  In 1999, the sixth Louis Latour passed the running of the business into the hands of his son, Louis-Fabrice, who is a strong advocate of the family philosophy of integrating modern innovations with the best of established traditions.  According to Louis-Fabrice, it is an unwritten rule in the family that each generation should leave something new for future generations.  For the last decade Maison Louis Latour has been the unofficial champion of environmental care in Burgundy since joining FARRE (Forum de l’Agriculture Raisonnée Respectueuse de l’Environnement).

Food and wine
If you prefer red wines this is the ideal wine for dishes that normally have white wines recommended. But also goes well with meats, pates and cheeses that are not strongly flavoured.

Louis Latour wines are Kosher because they go through the Flash Pasteurization process - “The wine is passed through a heat exchanger that raises the temperature to 72°C for 2-3 seconds”. This process does not harm the wine in any way.
