Why we recommend this wine
We have been searching for years for a Nebbiolo from Barolo or Barbaresco to round out our range of Italian reds. Finally, we have found a small family-owned producer who makes quality wines, ‘nurtures nature’ and bottles half bottles.

The wine
Ca’ del Baio say that this is their most traditional-style Barbaresco representing the elegance of Barbaresco at its very best, without flaunting the muscle of Nebbiolo. It is made in the traditional manner with stem-free on-the-skins fermentation for 7 to 15 days in steel at a controlled temperature. The wine matures for 30 months in big casks made of Slavonian oak, and is then cellared for 6 months in the bottle prior to release. It is typical of Vallegrande and Treiso more broadly.

The wine estate
The proximity of the Ca’ del Baio vineyards to the winery allows them to save time and water, and to reduce pollution. The use of chemical fertilizers and synthetic herbicides has long ceased on their land where they use green manuring in keeping with the local tradition of days gone by. In the winery they prefer to use native yeasts in the fermentation to allow each wine to express itself to the full, and they limit the use of sulphur dioxide to the absolute minimum so as to ensure their wines will age correctly.

Food and wine
Being light bodied it needs to be matched with foods that are also light, so roasts rather than stews, sheep’s milk cheeses rather than cow’s milk, etc.

Did you know?
Despite the prestige and acclaim of Nebbiolo-based wine from Barolo and Barbaresco, it is far from the most widely grown grape in Piedmont. In 2000 it accounted for a little over 3% of Piedmont's entire production.
