Great fruit and softish tannins make this a great match for cold meats, rich red meat and game and, of course, hard cheeses.

Why we recommend this wine
This is a great entry-level Chianti that is real value for money. The 2014 vintage Classico was awarded Gambero Rosso's highest award of Tre Bicchieri (as was the 2013) - very rare for a red at this price point.

The wine
The grapes were harvested by hand which was followed by gentle destemming. The fermentation takes place at a controlled temperature of 23°C on the skins for twenty-two days. Then the malolactic fermentation takes place in oak barrels. At the end of this period, the wine is assembled and bottled with a further period of aging in the bottle.

The wine estate
Livon (the owners of Borgo Salcetino) was established fifty years ago as a specialist Friulan winemaker. In 1996 they branched out and acquired Borgo Salcetino to make Chianti Classico in Radda in Chianti. This estate comprises 30 hectares, half of which are dedicated to wine growing. An important gradual renovation of the vineyards has been carried out, which included reaching a density of 7000 plants per hectare, and improving the quality of the vines.
