Why we recommend this wine
We have always loved the wines of Billaud-Simon but have had trouble getting in there for tastings when in Chablis. However, we did manage to blag our way in in 2014, see out notes here, and were impressed with their range of wines.

The wine estate
Domaine Billaud-Simon has been established in Chablis since 1815 and covers almost 17 hectares of vines including four Grand Crus; Les Clos, Vaudésir, Les Preuses, and Les Blanchots, as well as four Premier Crus, including Mont de Milieu. Billaud-Simon produces wines from high quality old vines which are crystalline, iodized and light-bodied. The domaine’s vineyards are planted mainly with old vines with an average age of 50 years that have been carefully tended to and preserved over time. The grapes are left to ripen slowly to produce rich and concentrated Chablis wines of exceptional quality.

Did you know?
In Chablis the biggest challenge is springtime frost which occurs just as the grape vine buds; this can wipe out the crop. To combat frost they have introduced preventive measures, such as smudge pots and aspersion irrigation. Smudge pots work by burning oil to provide direct heat to the vines and a blanket of smoke smog. Aspersion involves spraying the vines with water as soon as temperatures hit 32 °F (0 °C) and maintaining persistent coverage. The water freezes on the vine, shielding it with a protective layer of ice that works like an igloo retaining heat within the vine.
