Rieslings can be paired with hot, chilli-based foods, such as Thai curries. It also goes well with any food that is enhanced by a dash of lemon such as subltly flavoured fish, chicken.
Here is a great recipe - chilli prawn and mango salad
Ingredients (for a main course - halve for a starter);
Marinade
I tablespoon brown sugar
2 tablespoons oil - preferably groundnut
2 tablespoons sweet chilli sauce
2 teaspoons chilli (this depends on how hot you want it)
800g peeled, uncooked praws
Juice of 1 lime
2 mangoes peeled and sliced - err on the side of under-ripe
1 small cucumber sliced
200 g baby spinach
small bunch of coriander leaves chopped
Toss the prawns in the marinade and refrigerate for half an hour
Prepare the salad and then cook the prawns for a minute or two in a hot pan until just done. Place on the salad.
Add the marinade to the pan to cook through. Remove from heat, stir in the lime juice and drizzle over the prawns.
Sprinkle the chopped coriander.
